Culinary Corner #13 - Stuffed Green Peppers

STUFFED GREEN PEPPERS

Stuffed green peppers! Add a loaf of French or Italian bread and you're all set. Your Chef's Tip for today? Use diced mushrooms instead of sausage to turn this into a vegetarian dish.

INGREDIENTS
4 large Green bell peppers
1 large onion
8 oz sweet Italian sausage
1 cup brown, long grain rice
1/2 cup grated parmesan cheese
1/4 cup grated mozzarella cheese
2 tbsp olive oil
1/2 tsp ground Fennel
1/2 tsp dried oregano
Salt and ground black pepper to taste

PREPARATION
1. Preheat the oven at 190ºC (375ºF).
2. Cook the rice according to package instructions or using a rice cooker.
3. Trim the bottom of the bell peppers so they have a flat surface to stand on, then cut the stem end and remove the seeds.
4. Place the hollowed out peppers on a baking dish that has been sprayed with non-stick spray or olive oil.
5. Remove the stem from the pepper caps and trim off any white membrane.
6. Dice the pepper caps and the onion into a fairly small dice.
7. Heat 2 tbsp of olive oil in a large skillet, then sauté the diced pepper and onion for 3-4 minutes until they are softened but not yet browned.
8. Remove the pepper and onion to a bowl, squeeze the sausage out of its casing and cook it until it's slightly browned.
9. Put the pepper and onion back on the skillet, add the dried spices and sauté for 2-3 minutes to blend the flavours.
10. Add the rice and the parmesan cheese, season with salt and black pepper and cook just long enough to warm.
11. Stuff the mixture into the hollowed-out peppers and press down to make sure it's tightly packed.
12. Bake the peppers for 30 minutes.
13. Add a generous pinch of mozzarella cheese on top of each pepper, then bake for 10-15 more minutes or until the cheese is melted and lightly browned.
