Cheddar really runs the gamut. Mild to extra sharp. Sometimes smooth and creamy, sometimes with those crystallized sugars in the middle. It feels like a bourgeois decadence to eat a nice aged or smoked cheddar sometimes. Workers of the world, eat cheese!
